Here is an easy and savory Flan recipe. Enjoy!
Ingredients
For caramel: 100 grams sugar and 2 tablespoons water
For the cream: 400 ml of milk, 100 grams sugar, 2 whole eggs and 2 yolks, a tablespoon of vanilla, one tablespoon of rose water
Preparation
Heat the milk with the sugar until the sugars dissolves, but be careful not to bring it to boil.
Mix in a bowl the eggs with the eggs yolks, vanilla and the rose water.
Add the warm milk to the egg mixture, and whisk well.
To prepare the caramel place in a pan 2 tablespoons of water and the sugar. Let the sugar melt until the color turns brown.Take the pan off the stove , then place a tablespoon of caramel into each ramekin. The caramel should fill a quarter of the ramekin, the rest should be filled with the milk and eggs mixture. Place the ramekins into a pan with hot water, making sure the water is half way up the ramekin walls.
Place the pan in the 330 deg F preheated oven for 45 to minute. The flan is ready when it gets the consistency of a gel. Remove the pan from the oven, let the ramekins cool down then keep them in the fridge for at least 2 hours.
To detach the flan from the ramekin, spin a thin knife blade around the rims.
